Il “Soffocone di Vincigliata” di Bibi Graetz è un vino rosso che si beve con grande piacevolezza, senza risultare mai stancante per chi se lo ritrova in tavola, ma anzi dimostrandosi sempre puntuale e preciso. È senza dubbio un prodotto intenso e corposo, in cui il Sangiovese è indiscusso protagonista del taglio finale con una personalità che rivive in un sorso perfettamente avvolgente. Un’etichetta che va abbinata alle grandi carni rosse e ai piatti a base di selvaggina.
Questo rosso “Soffocone di Vincigliata” nasce da un blend elaborato dalla cantina Bibi Graetz dove, accanto a un 90% di Sangiovese, ritroviamo anche piccole percentuali di Canaiolo e Colorino, vitigni autoctoni della Toscana. Le viti di queste tre varietà hanno un’età di circa 40 anni e crescono con il sistema di allevamento a guyot, affondando le radici in terreni ricchi principalmente di argilla e galestro. La fermentazione del mosto avviene in vasche d’acciaio per una decina di giorni, periodo in cui si susseguono diverse follature manuali. L’affinamento finale ha una durata di 15 mesi e avviene in barrique di rovere francese. Al termine della maturazione, si procede con le operazioni di imbottigliamento e messa in commercio.
