In Gaelic, Dair Ghaelach, pronounced "dar gayloch", means Irish oak. After 15 to 22 years in American oak barrels, this version was refined for ten months in new Irish oak barrels in Kilkenny County. According to Kevin O'Gorman, the master of maturation at the Midleton Distillery, with this maturation, a greater supply of vanilla, caramel and toffee gives Midleton even more sweetness. We will add, that the fruity character of this remarkable single pot still has also increased in intensity.
